  1. Looks so good!!!Just a disclaimer. Dashi powder is made of dried fish so it’s not vegan! But mushroom (shitake type) with seaweed/kombu broth could be a substitute to get that flavour?

  3. Seriously? Peel the potatoes and squeeze the boiled potato through a potato ricer. Faster and much more efficient.

  4. I'm not a funguy people tell me, because I live by the rule: "no fungus among us." ( actually, mushroom texture is what I dislike, so I don't mind a tougher mushroom, like a morel, or something, but the squeeky common mushrooms set my teeth on edge 😛 )

  10. Using a garlic press to mash potatoes? Phooey. That was already done better a couple of centuries ago, and it's called a ricer. It's roughly 7 2/3 times more efficient and effective. They're cheap. Get one.

  13. Wouldn't it make more sense to use a potato ricer than a garlic press? I assumed that's what the original chef used.

  14. Dashi powder on the udon recipe isnt vegan, maybe could be replaced with nutritional yeast
